Just when you thought you couldn’t crave fries any harder, along come Parmesan Truffle Fries. If you haven’t had them yet: mind blown. If you haven’t tried them at home yet… wait. What? Yes. Mind blown again. Parmesan truffle fries are so simple to prepare, it’s dangerous (not literally). All the familiar golden crunch of a regular fry with a super chic upgrade.

Not sure what to serve with your parmesan truffle fries? Anything. You can serve anything! But here’s my current fave… grilled tomahawk steak with herb butter. The whole restaurant experience without the taxi fare. (And get the kids to wash up.)

A relative newcomer to the potato scene, lighter than loaded fries and more occasional than a classic lightly salted, truffle fries have been gaining popularity for nearly 25 years.

Originally, blessed with actual white truffle shavings in their lux LA homeland, they are now a rather more accessible side dish making their way onto tables in burger joints and at home.

Almost garlicky, or oniony, the white truffle aroma is less pungent than black. Partnered with a hit of sharp parmesan these crunchy-coated, fluffy-centred golden rods are temptingly moreish and easy to match with any main.

Go lobster and white wine for a decadent feast, or with a burger and beer for more laidback vibes. But be warned, once you’ve tried these fries, there’s no going back.

How to make them

There are two simple and fuss-free approaches here: 1) the traditional oven approach. 2) The air fryer approach.

Either way, after prepping your potatoes into little soldiers and spraying evenly with cooking oil, they go into the oven or fryer for the appropriate cooking time. 10 minutes before the time is up, drizzle with the truffle oil and pop back in. 2 minutes before the time is up, sprinkle with the parmesan shavings and back in to melt.

I’m not keen on deep-frying in general. But if that’s your preferred method, you can prepare your parm truffle fries that way too.

If you don’t have the time to chip the potatoes from scratch, you can even use frozen fries. No judgement! Just follow the same cooking method.

Recipe tips and notes

  • Because I make air fryer fries so often, I had to buy a potato chipper. Peeling and chipping spuds every other day was taking the edge of my fry pleasure! You don’t strictly need one for this recipe, but if you want to get the chopping done quickly and neatly, I can recommend one.
  • Spray your fries with cooking spray. I used an olive oil spray. You can also use a teaspoon of regular olive oil, but it’s harder to get an even coat.
  • Air fryer potatoes need a good dose of seasoning. They are lighter and less oily than a roast potato or deep fried potato so they need a bit more zhuzh. The zhuzh in parm truffle fries however, is the parm and truffle.
  • You probably already know from experience how long fries take to cook in your own air fryer. It tends to range between 20-40 minutes depending on the make and model. If you’re not sure, check on the fries as they cook and get to know your appliance. In my Instant Vortex Plus 6-in-1 ClearCook 5.7L Air, they take a reliable 20.
  • The truffle oil is used as a seasoning, not as a cooking oil, so it’s added at the end. How much you need will depend on the quality and freshness of what you have. Truffle oil will degrade over time, but it is worth investing on a small bottle of high-quality stuff!

Storage and leftovers

As any French fry fan worth their salt knows, French fries have to be eaten hot. Cold French fries? That’s not hot. But do you want to hear some good news? You can totally reheat your fries in your air fryer! It just takes 4-6 minutes with a quick shake half way through.

Ingredients

  • 5-6 medium potatoes see notes
  • cooking spray
  • 1 tsp salt
  • 4 tbsp Parmesan cheese
  • 1-2 tsp truffle oil

Instructions

  • Wash the potatoes and cut them unpeeled. You can use a knife or a potato chipper. Wash the cut potatoes again or better yet soak them in cold water for 10-20 minutes if time allows. Then drain and dry them thoroughly with a kitchen towel. There should be no moisture left on the surface of your potatoes.

  • Spray them with an oil spray all over, shake and spray again until evenly coated, then season with salt. Put your seasoned potatoes into the basket of an air fryer, select the Air Fry option and cook for 10 minutes. Then take the basket out, shake the potatoes very well, drizzle with the truffle oil and cook for 8-10 minutes longer until the potatoes are golden on the outside and cooked all the way through. 2 minutes before the fries are done, open the air frying and sprinkle with 2 tbsp of grated Parmesan cheese, then cook until the cheese is melted.

  • Sprinkle with more Parmesan cheese before serving.

  • Alternatively you can use frozen fries and either air fry them for 6-8 minutes or oven cook them according to package instruction. Add the truffle oil and grated Parmesan in the last 2 minutes, so the truffle scent doesn’t evaporate.
